Description

This variety forms full, slightly varied heads of savoyed leaves. It is characterized by pink-purple stems and ombré leaf coloring, where the purple pigmentation of the outer leaves fades to green at the center. Exposure to colder temperatures intensifies the leaf color, resulting in an intensely dark purple hue. The leaves are tender and suitable for use in stir-fries, stews, or hearty salads.

Origin and Breeding

Rainbow Tatsoi was bred by Dan Brisebois of Tourne-Sol Cooperative Farm. The variety originated from an accidental cross between a Yukina Savoy and a Pink Petiole Mix. Following this initial cross, Brisebois conducted selection over several generations to stabilize the round leaf shape, purple color, and pink/purple stems.
