Filderkraut is a traditional German cabbage variety originating from the Filder plateau in southern Germany, dating back to the 1700s. It is renowned for its mammoth, unusually pointed heads which can easily exceed 10 pounds in weight. This long-season, fall-harvested vegetable stands out in the garden not only for its size and shape but also for its extra sweet flavor and juicy texture. Ideally suited for making outstanding traditional sauerkraut, Filderkraut is a rare selection that was once nearing obsolescence due to processing difficulties associated with its unique form. Recognizing its culinary value, Slow Foods has included this delicious variety in its Ark of Taste.
