Badger Flame is a visually striking beet variety known for its vibrant orange-yellow interior and cylindrical shape. Bred by Irwin Goldman at the University of Wisconsin-Madison, this cultivar was selected specifically to reduce geosmin, the compound responsible for the earthy flavor often associated with beets. The result is a mild, sweet beet that is excellent when eaten raw. The roots reach 6-7 inches in length and feature flame-like colors that deepen as the season progresses.
